Evolution

Easter Monday, April 13th 2009

It's really amazing to see the evolution of our shop going from day one and continuing onwards--in my mind back in 2007 I had planned a pure cake shop with just whole cakes, some cookies, and nice sweet things, with a completely different name: Monticello Bakery. (It's an inside joke for most Americans!) We were going to be open Monday to Friday, from 10 a.m. to 5 p.m., and just make sweet cakes for all of London. Three things I promised I wouldn't have in the shop: sandwiches, croissants, and cupcakes.

But the power of the London community has shaped us instead into something completely unexpected yet perfectly in sync with the essence of what we are: a place to find good food, made with our hands alone. We have our croissants, our cupcakes, and our sandwiches, and have incorporated a strong and dynamic lunch menu and now afternoon tea, also an unexpected and pleasing turn.

So the evolution continues--we will start testing out a Savoury breakfast spread and really put out all the stops on breakfast and be open all seven days a week! We will post our new hours shortly, so now you can come and visit us on Sundays, which we are gearing specifically for afternoon tea. The next evolution will be cupcakes---we've dabbled a bit, modifying our whole cakes for cupcakes, but I've now since discovered that cupcakes still have not been perfected yet by anyone--there is always room for improvement. A michelin-starred cupcake, is it possible? Maybe not, but we're going to aim for it.
